Éen van mijn favorieten, de Prunier 20 jaar met een smaak die mijninziens veel lijkt op die van een Caribische rum.

Geproefd bij de Cognacproeverij, wat vonden jullie ervan?
Informatie van Prunier:

Grape varieties : Ugni Blanc essentially

Composition : Fins Bois 1988

Geology : The Fins Bois appellation. Most of this area is covered by clayey, chalky soils known as "groies" very similar to those of the Champagne Cru, except for their red colour and hard stones from the Jurassic. Lying in a lower area known as the "Pays Bas" (low countries) north of Cognac, heavy clayey soils can also be found (60% clay). The Fins Bois surround the first three crus. Their 31 001 ha produce round, smooth Cognacs that age fairly quickly, with a bouquet that recalls the scent of freshly pressed grapes.
Distillation : When the fermentation of the wine is over, comes the time of the distillation. This is carried out following the “Charentaise” technique, which is done in two ways. The wine, sometimes separated from its “Lies”, is put in the alambic where it is heated. The ebullition is concentrating a liquid called “Brouillis”, which is about 30% vol. and which represent about a third of the initial volume. After having obtained two new “Brouillis”, they are all re-introduced into the alambic for the second distillation called “bonne chauffe”.

After having passed in an alambic “Charentais”, we have a Spirit or “Eau-de-Vie” which must not be over 72% vol. of alcohol in order to have the Appellation “Cognac”.

Ageing : We use oak casks from the Limousin area which contain from 250 to 400 liters that we keep in cool and humid cellars.

Tasting : The “20 Years Old” PRUNIER Cognac shows a nice brown gold colour.

* Delicate nose dominated by almond, hazelnut, marzipan, fig and orange peel aromas.

* Mouth : fine, light, naturally sweet, with round and smooth tannins. Same aromas as noticed in nose with a finish dominated by orange/tangerine.

*Good length, clear and delicate.

It is a very well balanced Cognac, light and subtle which improves as it opens up in the glass.

Ik vond de familie Prunier echt de verrassingen van de avond.
Qua smaak en geur bleven beide cognacs fier overeind.
Ook toen ik beide glazen, onder het genot van de leuke anekdotes, leeg had, bleven de geuren me imponeren.

De Prunier Borderies Special Reserve (van 1991 en 1992) was voor mij de topper van de avond.
Zacht, aanwezig, rond, en met een vleugje nootmuskaat.

Graag verneem ik de mogelijkheden om deze cognac tot mijn bescheiden collectie toe te voegen.
